Factors affecting Glycemic Index
A food item's glycemic index is determined by many factors. Whole-grain foods have lower GI than their refined things.
Glycemic index of highly processed foods is high e.g. white rice. Thus Glycemic Index (GI) is a measure of how fast a food is likely to raise your blood sugar and this can help maintain these levels in blood.
- Fat and Protein: Foods containing fats and proteins have lower glycemic index.

- Unripened fruits have lower glycemic index values than ripe fruits
